2015 VDF ‘Substance’
Sauvignon Blanc grapes from organic vines aged 45-70 years. 24 maceration, then pressed and left to ferment slowly in an old 1300L barrel for 7 months. Then aged for a further 8 months on lees. Never racked, and no SO2 at any stage.
